    Sourdough is not just a specific type of bread, but a leavening process that can be applied to many different recipes. Whether it’s sandwich bread, rolls, pretzels, cinnamon rolls, bagels, or any other favorite yeast-based recipe, you can adapt it to use sourdough starter.

    Here are a few tips to keep in mind:

    1. When substituting sourdough starter for yeast in a recipe, adjust the water and flour proportions accordingly.
    2. Aim to use around 15-20% sourdough starter or levain in relation to the flour in the recipe.
    3. Note that the dough will require a longer fermentation time and warmer temperatures (78-80 degrees F) for bulk fermentation. After shaping, it will need another extended rise at warm temperatures before baking.

    - Is full of tiny bubbles or foaming
    - Doubles in size and then falls back down
    - Develops a clear, gray, or black liquid on top
    - Gets a white, powdery substance on the surface

    It’s time to feed it! These are all indications that your sourdough starter is hungry.

    Once the starter doubles in size or more and reaches its peak, it’s ready to be fed. You can feed it at its peak or as it begins to fall back down.

    After using the starter at its peak, I usually refeed it and then store it in the fridge for the next week or two until I’m ready to use it again. When I take it out of the fridge, I immediately feed it and then wait for it to double before using it in my bread. Rinse and repeat.

    Sourdough starter is THE most important component of sourdough bread. A healthy and active starter can transform bread from flat and dense to light and airy.

    Keep your starter happy with these few tips:
    💕Feed often. Starter in the fridge should be fed every 7-10 days and daily on the counter.
    💕 Keep it warm. Starter thrives in warm environments. Especially in the winter, when waiting for your starter to rise, keep it in a warmer spot in your house. You can also use warmer water when feeding to give it a jump start.
    💕 Weigh it out. Ensure you are using equal weight of flour and water. If you are using cups you need to use 1/2 the amount of water as flour.

    I know this might be controversial, but I don’t clean my starter jar every day. 🤷🏼‍♀️ I’m not a fan of doing lots of dishes.

    If you’re like me and also use the same jar to feed your starter, there’s an easy way to keep track of how much starter is in there. Simply weigh your jar before adding anything to it and write down the weight. Then, when you weigh your jar with the starter, subtract the weight of the jar and feed as usual. It’s a simple solution 👍🏼
